ZUTATEN (2 PERSONEN)
2 große Scheiben Toastbrot (Weißmehl)
2 Scheiben Käse
Brotaufstrich
2 Eier
Butter
1 Tomate
2 Stängel Petersilie
20 g Käse, gerieben
Pfeffer
Petersilie kleinhacken. Tomaten in Scheiben schneiden.
Butter in einer kleinen Pfanne schmelzen.
Das Ei aufschlagen und hinzugeben, bei mittlere Hitze anbraten.
Nach einer Minute Tomaten und Käse auf das Ei legen und weitere 2 Minuten braten.
Brotscheiben toasten, etwas abkühlen lassen und mit Brotaufstrich bestreichen.
Nacheinander Scheibenkäse und Spiegeleier darauf legen.
Mit Petersilie und Pfeffer garnieren.
