ZUTATEN (2 PERSONEN)
300 g Brokkoli
¼ Lauchstange
¼ weiße Zwiebel
400 ml Gemüsebrühe, hefefrei
2 Stängel Petersilie
2 EL Hafersahne
1 EL Kokosöl
Salz
Lauch putzen und in Ringe schneiden.
Brokkoli in Röschen schneiden.
Zwiebel feinhacken und erhitztem Öl anschwitzen. Brokkoli und Lauch hinzugeben und kurz anbraten.
Mit Gemüsebrühe ablöschen, dann auf niedriger Stufe 15 Minuten garen.
Petersilie hinzugeben, mit einem Stabmixer pürieren, Hafersahne unterrühren und nochmal kurz erhitzen.
Mit Salz abschmecken.
