ZUTATEN (2 PERSONEN)
1 Tasse Quinoa
¼ Salatgurke
8 Cocktailtomaten
50 g Rucola
4 EL Sesamöl
½ TL Apfelessig
Salz
Pfeffer
Quinoa in einem Sieb unter fließendem kaltem Wasser abspülen.
In leicht gesalzenem Wasser aufkochen, dann auf mittlerer Stufe ca. 10 Minuten garen.
In einem Sieb abgießen und abkühlen lassen.
Gurke in Würfel, Tomaten in Hälften schneiden.
Rucola putzen, abwaschen und trockenschleudern.
Für das Dressing Essig mit Öl, Salz und Pfeffer verquirlen.
Quinoa, Gurke, Rucola und Tomaten hinzugeben und umrühren.
