1 Paprikaschote
100 g Rucola
1 Frühlingszwiebel
400 ml Gemüsebrühe
3 EL Zitronensaft
1 EL Wasser
1 TL Honig
1 EL Kokosöl
Salz
Pfeffer
Linsen in Gemüsebrühe 10 Minuten köcheln.
Paprikaschote würfeln, Rucola putzen, Frühlingszwiebel in Ringe schneiden.
Für das Dressing Zitronensaft mit Honig, Öl, Wasser, Salz und Pfeffer vermengen.
Alle Zutaten in eine Schüssel geben und gut umrühren.
