Paprikaschote entkernen und in kleinere Stücke schneiden.
Möhre, Zwiebel und Ingwer schälen und klein würfeln.
Zwiebel in einem mit Öl erhitzten Topf anschwitzen.
Ingwer und Curcumapulver hinzugeben.
Kurz weiterdünsten, dann Linsen einrühren.
Mit Gemüsebrühe und Kokosmilch ablöschen, weitere 20 Minuten auf niedriger Stufe köcheln lassen.
Mit einem Stabmixer pürieren, nochmal kurz aufkochen und mit Gewürzen abschmecken.
Mit Koriander anrichten.
