250 g Auberginen
1 rote Paprikaschote
2 Tomaten
1 Zucchini
1 Zwiebel
2 Knoblauchzehen
2 EL Olivenöl
Salz
Pfeffer
Weitere leckere Rezepte für Polymyalgia:
Zucchini, Auberginen und Paprika putzen und kleinschneiden.
Tomaten mit heißem Wasser übergießen, häuten und in kleine Stücke schneiden.
Zwiebel und Knoblauch feinhacken und in einer mit Öl erhitzten Pfanne anschwitzen.
Gemüse hinzugeben und im eigenen Saft anbraten.
Auf niedriger Stufe 30 Minuten schmoren lassen.
Mit Salz und Pfeffer abschmecken.
