ZUTATEN (2 PERSONEN)
200 g Blumenkohl
100 g Fetakäse
500 ml Gemüsebrühe
½ kleine Zwiebel
½ EL Mehl
½ EL Butter
1 Stängel Petersilie
Muskatnuss
Salz
Pfeffer
Blumenkohl in Röschen schneiden und in etwas Salzwasser bissfest garen.
Zwiebel feinhacken und in der erhitzten Butter andünsten.
Mit Mehl bestäuben, Gemüsebrühe einrühren. Blumenkohl hinzugeben und zugedeckt ca. 15 Minuten weich kochen.
Mit einem Stabmixer pürieren.
Feta in kleine Würfel schneiden und in die Suppe geben. Stetig umrühren bis der Käse geschmolzen ist.
Mit Gewürzen abschmecken, mit Petersilie garnieren.
